Summer Cocktails at L’Abattoir with Shaun Layton
L’Abattoir in Gastown, Vancouver is known for their exquisite, modern, west coast inspired menu, and craft cocktails that locals will tell you come from “the best mixologist in Vancouver.” I can’t argue.
Head Barman Shaun Layton will pass you a 2-page cocktail menu split into “classic” and “original”, with the caveat that if you want to try something else, he’ll gladly help you craft your own unique cocktail. I overheard a couple at the bar next to me sharing their preferences, and Shaun was quick to recommend a drink for each of them that they were more than happy with. So when it was my turn, I told Shaun I was looking for a summery cocktail - maybe one that he could teach me how to make for my friends at a summer BBQ that will REALLY impress them. He was game.
El Camino
1. Start with a salt-rimmed glass. Shaun recommended to only coat half of the glass with salt to give your guests the option.
2. Next, fill the glass with extra large ice cubes, like the ones you can find here. Small ice melts too quickly, watering down the cocktail and diluting the flavor.
3. Add 2 ounces of watermelon-infused tequila. To make this infused tequila, you’ll mix 1 bottle tequila (he recommends El Jimador Blanco) with about 2 cups of watermelon, and let it soak in a container for about 24 hours. Then strain the mixture using a strainer or cheesecloth.
4. Add 1/3 oz Aperol.
5. Add 1 oz fresh lime juice.
6. Add a dash of agave nectar. You can find this in most grocery stores.
7. Top off the glass with grapefruit soda.
8. Give it a stir.
9. Now add a fresh grapefruit wedge to the glass.
10. Add a straw - but Shaun recommends drinking from the glass as the salt balances out the sweetness of the drink.
I know I’ll be making this at my next summer party, and my friends will definitely be impressed.
